Eclipse in Space from a commercial space coaster would not be great as it would be very quick. A rough estimate shows that even if aimed in the right direction the relative speed of the rocket would shorten the intercept time and not lengthen it for side views. The viewing would be best out the front or back aimed towards or away from the eclipse.
